The previously described “Mehlknepp” (flour dumplings) are mixed with boiled potatoes and a bacon-cream sauce — thus, they are “married.”
Gefillde, literally “the filled ones,” are dumplings stuffed with liver sausage and/or minced meat.
In the Saarland, “Knepp” means dumplings. So-called “Mehlknepp” are flour dumplings, which are often served as a side dish.
In any list of Saarbrücken recipes, one dish must not be missing: Schippelsches Bohnesupp, also known as Bibbelsches Bohnesupp — the traditional Saarbrücken bean soup.
In Saarbrücken, Quetschekuche (plum cake) is traditionally enjoyed together with a hearty bean soup known as Schnippelsches Bohnesupp.
