In the Saarland, “Knepp” means dumplings. So-called “Mehlknepp” are flour dumplings. They are often served as a side dish with various meals — especially with hearty meat dishes and sauces, such as goulash — or used as a base for other delicacies. They are an essential ingredient in „Geheirade“ oder „Verheirade“, dishes that can be found throughout Saarbrücken and the Saarland’s regional cuisine.

Ingredients
- 500 g flour (wheat, spelt, fine spelt flour, or double-milled flour)
- 2 eggs
- 2 teaspoons salt
- 250 ml Wasser oder halb Wasser halb Milch
Preparation of Mehlknepp
The preparation couldn’t be easier: Mix all the ingredients into a smooth dough. Then, using a spoon, form small dumplings and drop them into boiling salted water. Let the Knepp simmer gently over low heat for about 20 minutes — and they’re ready!
